2 1/2 C. Shredded Reduced-Fat Cheddar Cheese
1/2 C. low-fat cream cheese
2 t. minced onion
2 t. minced roasted garlic
1 t. dijon mustard
8 T. Amber Ale (or beer of your choice)
bacon for garnish
In a food processor fitted with the metal blade, process the cheddar cheese, cream cheese, onion, garlic and mustard until they form a coarse paste. With the machine running, pour the ale through the feed tube and process until creamy. Transfer to serving bowl. Cover and refrigerate for at least 2 hours to allow the flavors to meld. Remove from refrigerator 1 hour before serving. Garnish with the bacon and pretzels.
